When Chef Monica Cobb moved back to Beaumont in 2003, she fell in love with the vibrant Vietnamese community throughout the Golden Triangle. After discovering the Asian Market with her husband John, she formed a lasting friendship with the owners, who became treasured culinary mentors and introduced her to the heart of Vietnamese cooking and hospitality.
For over 15 years, Monica’s has been creating these signature Banh Mons blending Vietnamese flavors with Southeast Texas soul and inspiration from Monica’s California cuisine background.
Favorite Banh Mons include lemongrass chicken, Gulf shrimp rémoulade, and the famous Elvis featuring blackstrap molasses glazed pork loin, fried plantains, and Monica’s signature Vietnamese style hoisin sauce. Inspired by traditional peanut sauces yet made without actual peanuts, the sauce delivers a nostalgic sweet savory flavor Monica swears tastes a little like an apple Jolly Rancher.
